Dishes
Three kitchens, and they barely overlap. The Madurai night kitchen of griddles and mutton; the karisal dryland kitchen of millet, koozh and dried chilli; and the temple and hill kitchen of Palani and Srivilliputhur, which produces two of the region's registered foods.

Dosa, egg and minced mutton pressed together on the griddle so the three fuse into one layered thing, served with a mutton gravy. Madurai's single most identifiable dish, and best after dark.

Kothu parottaVegetarian and non-vegetarianMain
Parotta chopped on the griddle with egg, gravy and meat under two iron blades. A dish invented to use up the day's unsold parotta and now the reason many stalls stay open at all.
KalakkiNon-vegetarianSide
Egg beaten into a hot pan with pepper and cut off the heat while still loose, scooped over parotta. Sold by the same stalls, ordered by everyone, and almost never written on a board.
Aatu kaal payaNon-vegetarianBreakfast
Goat trotters simmered overnight into a thin, gelatinous, pepper-heavy soup, eaten at dawn with idiyappam or parotta. The overnight cooking is the point — the collagen has to break down before the shift starts.
Mutton chukkaNon-vegetarianDry fry
Mutton boiled with turmeric and then fried down with shallots, curry leaf and coarse-crushed pepper until the moisture is gone and the masala grips the meat. Dry by design so it travels and keeps through a shift.
Mutton kola urundaiNon-vegetarianStarter
Minced mutton pounded with roasted gram, fennel and chilli into a tight ball and deep-fried. A wedding-feast item in the region long before it was a restaurant one.
Kari kuzhambu and elumbu rasamNon-vegetarianMain
Mutton on the bone in a thin, sharply hot tamarind gravy, with the marrow bones separated out into a peppery broth drunk before the rice. Two dishes from one pot.
JigarthandaVegetarianBeverage
Reduced milk, nannari syrup, soaked badam pisin gum and a scoop of milk ice cream, served in a tall steel tumbler. The name is Urdu, not Tamil, and the makers still call the gum kadal pasi — seaweed — although what goes in now is almond gum.

Paruthi paalVegetarianBeverage
Hot cottonseed milk with jaggery, coconut milk, dry ginger and cardamom, drunk in the morning and offered to guests. A dryland drink that has been revived commercially in the last decade after nearly disappearing.
Kambu koozhVegetarianBreakfast
Overnight-soured pearl millet gruel, thinned with buttermilk and eaten with raw shallot, green chilli and salted pickle. Field food, and the region's most efficient answer to a working morning in the heat.
Ragi kaliVegetarianMain
Finger millet stirred into a stiff, glossy mass and eaten in pieces dipped into a hot gravy, usually with country chicken or dried fish. Cooked without stopping, because it seizes the moment the stirring does.
Srivilliputhur palkovaVegetarianSweet
Milk reduced with sugar over a long slow fire until it turns grainy and pale brown, cut into blocks and wrapped. Registered as a geographical indication in 2019-20, and sold from a row of shops on one street.

Palani panchamirthamVegetarianSweet
Virupakshi hill banana mashed with jaggery, ghee, honey and cardamom, with dates, raisins and sugar candy — and no water and no preservative at all. It keeps because the hill banana carries so little moisture. Registered in 2019-20, the first temple prasadam in India to hold a geographical indication.

Nannari sarbathVegetarianBeverage
Sarsaparilla root syrup with lime and water, drunk through the summer for its claimed cooling effect. The same syrup does duty in jigarthanda.
Malai vazhaipazhamVegetarianFruit
The Virupakshi and Sirumalai hill bananas — small, dense, sharply aromatic and grown only on the Palani and Sirumalai slopes. Both hold geographical indications from 2008-09, and one of them is the reason Palani's prasadam keeps.
