Dishes

Two overlapping registers again — the vegetarian household and temple kitchen of the interior delta, which is what most people mean by "Thanjavur food", and the fish-and-tamarind kitchen of the Nagapattinam and Karaikal coast, which shares almost nothing with it except the gingelly oil and the sourness.

PuliyodaraiபுளியோதரைVegetarianRice

Rice folded through a tamarind-and-gingelly paste with roasted gram, sesame and dried chilli. It is the standard prasadam of the Vaishnava temples of the delta and improves for several hours after it is made, which is precisely what it was built to do.

Kumbakonam kadappaகடப்பாVegetarianBreakfast accompaniment

A pale, loose gravy of moong dal and boiled potato ground with coconut, fennel and green chilli, served with idli or dosai. It exists almost nowhere else in Tamil Nadu and is the single most reliable way to tell a Kumbakonam breakfast from a Thanjavur one.

Paruppu urundai kuzhambuVegetarianMain

Steamed lentil dumplings dropped into a tamarind gravy at the last moment so they hold their shape and absorb it. A dish from the era before refrigeration, when the day's ground dal had to be used up.

Vathal kuzhambuVegetarianMain

Sun-dried sundakkai or manathakkali fried in gingelly oil and simmered in thick tamarind with roasted spice powder. Almost no water and a great deal of oil, so it keeps for two days without a fridge and tastes better on the second.

Mor kuzhambuVegetarianMain

Sour buttermilk thickened with a ground paste of soaked rice, coconut, cumin and green chilli, warmed but never boiled so it does not split. The hot-weather counterweight to vathal kuzhambu.

Ennai kathirikkai kuzhambuVegetarianMain

Small brinjals slit, stuffed with a roasted spice-and-gram paste, and cooked in tamarind until the gingelly oil separates and glosses them. The oil is not a garnish; the dish is named for it.

Medhu vadaiஉளுந்து வடைVegetarianSnack

Black gram ground thick on a stone with no water to spare, beaten to aerate it, shaped by hand with a hole and deep-fried. The hole is functional — it equalises cooking between rim and centre. Temple versions are threaded on a string as garland offerings.

AkkaravadisalVegetarianSweet

Rice and moong dal cooked to collapse in milk with jaggery and an unapologetic quantity of ghee, reduced in one vessel. The Srirangam temple version is the reference, and it is served at Koodaravalli in Margazhi.

Sakkarai pongalVegetarianSweet

New-harvest rice boiled with jaggery, ghee, cashew and cardamom, cooked outdoors in a clay pot at Pongal and allowed to boil over deliberately. The overflow is the ritual, not an accident.

Ashoka halwaVegetarianSweet

Moong dal cooked to a paste with ghee, sugar and a little wheat flour until it pulls cleanly off the pan. It is specifically a Thiruvaiyaru sweet, sold by the kilo to people arriving for the January aradhana.

Kumbakonam degree coffeeVegetarianBeverage

A dark decoction dripped through a two-chamber steel filter and cut with hot, undiluted cow's milk, poured between tumbler and davara until it foams. Why "degree" is genuinely disputed — the commonest account is that it referred to milk certified pure by a lactometer reading, others say the first, strongest run of the decoction. The milk is the constant in every account.

Delta meen kuzhambuNon-vegetarianMain

Seer, sardine or catfish in a thin, fiercely sour tamarind gravy with fenugreek, curry leaf and no coconut at all — the coastal kitchen's clearest separation from Kerala, a few hours west.

Nandu masalaNon-vegetarianMain

Backwater crab cracked and cooked down with shallot, pepper and a little ground coconut until the masala clings inside the shell. Eaten with hands and a great deal of time.

Kalyana rasamVegetarianSoup

The wedding-feast rasam — tamarind, tomato, crushed pepper and cumin, tempered in ghee and taken off the heat the moment it froths rather than boils. Boiling it is the standard local criticism of a bad cook.

Nei appam and ellu urundaiVegetarianSweet

Rice-and-jaggery batter fried in ghee in a dimpled pan, and sesame balls bound with jaggery, both made for Karthigai Deepam in November. The sesame is the delta's own crop, which is why the festival sweet here is seed-based rather than milk-based.
