खानपान पद्धति
The distinguishing fact about Mithila's kitchen is that its Brahmins eat fish. Maithil Brahmin practice treats fish as auspicious rather than polluting — it appears in wedding ritual, is given to a new bride, and is cooked at home without apology — which makes this foodway unlike any other Brahminical tradition in India except Bengal's and Kashmir's. Around it sits a pond-and-paddy kitchen: rice, mustard oil, fresh river fish, taro and gourd, five-spice tempering, and makhana in every form from a snack to a wedding sweet.

मसाले की पहचान
Panch phoran — fenugreek, nigella, cumin, fennel and mustard or radhuni — bloomed in mustard oil is the base note, with green chilli, ginger and turmeric over it and very little dry ground masala. Aroma comes from raw mustard oil and from whole seed, not from garam masala, and the region uses far less onion and garlic than the plain to its west.

Makhana harvesting and popping
Divers collect the seeds of the prickly water lily from a pond bed by hand, in water up to shoulder depth. The seeds are dried, graded, roasted in an iron pan at high heat, and then struck one by one with a wooden mallet within seconds of coming off the fire, so the kernel bursts white out of its black shell. There is no machine that does the striking as well as the hand does, which is why the industry is still village-based.

Pond aquaculture
Village ponds are stocked, fished and drained in rotation, and function as common property with customary rights of access. The pond, not the field, is the unit around which a Maithil village is planned.

Panch phoran tempering
Five whole seeds dropped into hot mustard oil at the start of cooking, in a fixed proportion, and never ground. It is the flavour signature shared across the eastern plain and is used here with a heavier hand on fenugreek.

Bhuja and sattu roasting
Grain and gram roasted in hot sand in an iron bhatti and either eaten as bhuja or ground to sattu — a whole meal that needs no fuel to serve, which matters in a flood country.

Steaming in leaf
Rice-flour dough wrapped in banana or turmeric leaf and steamed — pittha and bagiya, plain or stuffed with lentil, khoya or fish. The leaf is the vessel and it also flavours the dish.
