The everyday cooking is eastern-delta cooking done with estuarine ingredients, and the difference from a Kolkata kitchen is mostly in what is available rather than in what is done to it. The visitor's version — the crab and prawn set meal served on the tourist launches out of Godkhali — is a genuine local menu, but it is the festival end of it, not the daily one. The daily one is rice, a thin fish jhol and a green.

Kakrar jhalকাঁকড়ার ঝালमांसाहारीMain

Mud crab cooked in the shell with mustard, green chilli and a little coconut, thick enough to cling. It is eaten with the hands over a long time, and the fat from inside the carapace is the part people argue over.

Chingri malaikariमांसाहारीMain

Tiger prawn or the giant freshwater golda in coconut-milk gravy with cardamom and ghee. Here it is made with prawn caught the same day and with fresh coconut rather than tinned milk, which changes it more than any spice would.

Ilish bhapeमांसाहारीMain

Hilsa steamed sealed with ground mustard, green chilli and raw mustard oil. The fish is caught at the river mouths on its run upstream, so the Sundarbans eats it earlier in the season than the towns upriver do.

Chingri diye lau ghontoमांसाहारीVegetable with prawn

Bottle gourd cooked down with small prawns until the two are indistinguishable. A standard way of making a little protein carry a whole dish, and one of the commonest meals in the polder villages.

Bhetki paturiमांसाहारीMain

Barramundi fillet in mustard paste, wrapped in banana leaf and griddled until the leaf blackens. Bhetki is an estuarine fish and is at its best where salt and fresh water meet, which is exactly here.

Parshe machher jhalमांसाहारीMain

Mullet in a thin mustard gravy with nigella. A brackish-water fish that the western delta buys and the Sundarbans catches, and the household benchmark for whether a cook can balance mustard.

Kancha kolar koftaशाकाहारीVegetable

Green banana mashed with spices, bound and fried into balls, then simmered. Green banana grows on the embankment slope where little else will, which is why it appears so often on an island menu.

Nona jol-er chingri bhortaमांसाहारीSide

Small brackish prawns mashed with raw mustard oil, green chilli, onion and salt, uncooked or barely warmed. A bhorta in the eastern-delta manner, eaten with rice at the start of a meal.

Golda chingrir malaiमांसाहारीMain

The giant freshwater prawn, taken from the sweeter northern creeks and ponds, cooked in coconut with its head on. Farmed golda and bagda ponds now occupy a large share of the polder belt, which has changed both the diet and the soil.

Kochu shaak with prawnमांसाहारीVegetable

Taro leaf and stem slow-cooked with small prawns and coconut. Taro is one of the few crops indifferent to waterlogging, so it survives seasons that kill everything else in the plot.

Shutki bhunaमांसाहारीSide

Dried fish rehydrated and fried down hard with onion, garlic and chilli. More common on the eastern side of the forest than the western, and a dish that divides households on the same island.

Bhaat with nona-jol machher jholमांसाहारीEveryday main

Rice with a thin curry of whatever small brackish fish the creek gave that day — tangra, bhangon, khorsula — with potato and turmeric. This, not the crab, is the region's actual staple meal.

Joynagar moaজয়নগরের মোয়াशाकाहारीSweet

Kanakchur puffed rice bound with nolen gur and studded with gawa ghee, khoya and nuts. It carries a registered geographical indication, is made only between roughly December and February because the gur exists only then, and does not keep — a sweet with both a season and a shelf life.

Nolen gurer payeshशाकाहारीSweet

Rice pudding sweetened with date-palm gur instead of sugar, made in the same ten-week window. The gur is added off the heat, because boiling it turns the flavour flat.

Sundarbans honeyशाकाहारीCondiment

Wild honey from the giant rock bee, dark and thin, varying with the flowering — khalisha honey is the prized grade, garan and keora honeys are darker and stronger. It received a registered geographical indication on the Indian side in 2024.
