Two registers sit inside one kitchen. The Kathiawadi everyday meal is rotlo, chaas, an ember-roasted or garlic-heavy vegetable and a pounded chutney — food built for people who eat in a field. The formal thali, which is what visitors meet, is the same repertoire arranged as a sequence with farsan, sweets and refills, and it is a twentieth-century restaurant invention rather than a village tradition. Meat and fish belong to specific communities — Kharwa and Koli fishing households on the Sorath coast, Muslim and Sidi households around Junagadh — and are almost invisible in the majority kitchen.

Bajra no rotloબાજરાનો રોટલોशाकाहारीEveryday

A thick hand-patted pearl-millet flatbread, eaten hot with a lump of white butter, jaggery and a bowl of chaas. It is the single item that most reliably identifies a Kathiawadi meal, and it is eaten by hand with the rotlo crushed into the accompaniment rather than torn and dipped.

Ringan no oloરીંગણનો ઓળોशाकाहारीMain

Brinjal roasted in embers, peeled and mashed with raw garlic, green chilli, coriander and oil. Distinct from the north Indian bharta in that it is not cooked again after mashing and carries no tomato or onion masala.

Lasaniya batakaशाकाहारीMain

Small potatoes crushed and tossed in a thick paste of red chilli and raw garlic with a great deal of oil. It is the dish that defines the region's reputation for heat, and it is not made sweet anywhere.

Sev tametaशाकाहारीMain

A thin tomato gravy served with a fistful of gram-flour sev thrown on at the table, so the sev half dissolves and half stays crisp. The timing is the dish — sev added in the kitchen arrives as paste.

UndhiyuशाकाहारीMain

Winter vegetables, purple yam, sweet potato, papdi beans and fenugreek muthiya cooked slowly with green garlic and coriander. The Kathiawadi version is drier and hotter; the Surti one to the south is greener, wetter and heavier on papdi. Made in quantity between December and February and almost never outside it.

Khaman and dhoklaशाकाहारीFarsan

Steamed fermented squares — khaman yellow and soft from chana dal or besan, dhokla firmer and more sour from a rice-and-dal batter — tempered with mustard, sesame, curry leaf and green chilli. Bhavnagar and Surat both claim particular versions.

Bhavnagari gathiya with sambharoशाकाहारीFarsan

Soft, thick gram-flour strands fried at a low temperature so they stay pliable rather than brittle, served with fried green chillies and a warm shredded papaya and carrot sambharo. The soft texture is what separates gathiya from the harder ganthiya sold elsewhere.

Fafda and jalebiशाकाहारीBreakfast

Crisp gram-flour strips with jalebi, papaya sambharo and a besan kadhi. Eaten across the region on Dussehra morning specifically, to the point that shops plan the year around that one day.

Khichdi and kadhiशाकाहारीEveryday

Rice and mung cooked soft with ghee, and a thin buttermilk-and-besan kadhi poured over it. The evening meal in most households, and the one that reveals the region's dairy base most plainly.

Bharela ravaiya and marchaशाकाहारीMain

Small brinjals or long chillies slit and packed with a besan, groundnut, coriander and spice stuffing, then cooked covered until they collapse. The groundnut in the stuffing is local, not borrowed.

Kharwa coastal fishमांसाहारीMain

The fishing communities of Veraval, Mangrol and Porbandar cook and dry what the majority kitchen around them does not eat — bombil, ghol, surmai and prawn, simply fried with red chilli and turmeric or dried on racks for the trade. Veraval is one of India's largest fishing harbours and yet fish is nearly absent from a Kathiawadi restaurant menu, which tells you how community-bounded the cuisine is.

DabeliशाकाहारीStreet

A spiced potato filling in a pav with pomegranate, roasted groundnut and sev. It was invented in Mandvi in Kutch, not here, and was adopted across Saurashtra so completely that most visitors assume it is Kathiawadi.

Kesar keri no rasशाकाहारीDessert

Pulped Gir Kesar mango with a little milk and cardamom, eaten with hot puri and ghee as a full meal rather than as a course. The season runs from mid-May to late June and stops.

Adadiya and gundar pakशाकाहारीDessert

Winter-only sweets of urad flour or edible gum bound in ghee and jaggery with dry ginger, pepper and nuts, cut into thick squares. They are eaten as a seasonal tonic on cold mornings and disappear entirely by March.

Sukhdi and mohanthalशाकाहारीDessert

Wheat flour roasted in ghee and set with jaggery, and its richer besan cousin set with sugar and saffron. Sukhdi keeps for weeks without refrigeration, which is why it travels in every tiffin leaving the region.
