खानपान पद्धति
Punjab's kitchen is a dairy kitchen sitting on a wheat plain, and almost everything else follows from that. The household kept buffaloes, churned every morning, and had butter, buttermilk, curd and ghee before it had anything else — so fat is a base ingredient rather than a finish, souring is done with buttermilk rather than with tamarind or kokum, and a meal is built around bread rather than rice even though the state grows more paddy than it can eat. The second organising fact is the season. Mustard greens grow in winter and nowhere near a year, maize was the rain-fed cereal of the kandi and the bets, and jaggery is boiled when the cane is cut. Sarson da saag with makki di roti is therefore a December-to-February dish that the restaurant trade has turned into a permanent menu item, and eating it in July is a fair definition of eating it wrong.

मसाले की पहचान
A base of coriander, cumin, turmeric and red chilli built into a browned onion-ginger-garlic tari, with black cardamom, cinnamon and clove for the meat pot, ajwain in fried batters and in bread, methi dana in pickle and dried methi leaf crumbled over gravies at the end. Heat is moderate and the aroma is broad rather than sharp — the identifying flavour is not a spice at all but the browned onion and the ghee. Tomato, which now seems inseparable from the cuisine, is a comparatively recent arrival, and the older village gravies were built on curd and onion alone.

The tandoor as village infrastructure
A clay oven sunk in the ground or built up in a common yard, fired once and used by the whole neighbourhood in turn — the sanjha chulha. Households brought their own dough, waited their turn and gossiped while it baked, which made the oven the village's information exchange as much as its bakery. Firing one oven for twenty families instead of twenty fires is an efficient use of scarce fuel on a treeless plain, and that, not flavour, is where the institution comes from. Its move indoors and into restaurants came much later, and largely with Punjabi refugee restaurateurs after 1947.

Churning with the madhani
Whole curd is churned with a wooden plunger turned by a cord until the butter separates. The butter is lifted off as safed makkhan and the remaining liquid is lassi, which is drunk salted through summer or soured further for kadhi. One morning's work produces the day's fat, the day's drink and the week's ghee — nothing is bought and nothing is discarded.

Overnight embers
Whole black urad, and in some houses rajma or chana, is set on the dying fire at night and left until morning, so the pulse breaks down completely without ever boiling hard. Mah di dal owes its texture to residual heat rather than to cream; the restaurant version substitutes butter and time it does not have.

Langar cooking
Cooking for hundreds or thousands in a single sitting, in wide-mouthed pateelas over open flame, with volunteers rotated through fixed stations — dough, rolling, griddle, serving, washing. The scale forces standardisation, so the food is deliberately simple, mild, entirely vegetarian and free of onion and garlic in many kitchens, and the same dal and parshada are served in the same order everywhere.

Hand-patting maize bread
Maize flour has no gluten, so its dough will not roll — it has to be patted flat between wet palms or pressed out on a cloth, which is why makki di roti is thick, cracked at the edge and never round. The technique is a direct consequence of the grain's chemistry.

Gur boiling at the velna
Cane is crushed at a bullock- or tractor-driven roller in the field, and the juice boiled down in an open pan until it sets. Skimming, timing and the last few minutes decide whether the result is dark gur, pale shakkar or the soft crumble sold by weight in winter.
