खानपान पद्धति
This is a kitchen defined by what it does not do. There is no frying stage, no masala, no thickener and no dairy. Vegetables, herbs and meat go into water and are boiled, or into a green bamboo tube and are steamed, and the seasoning is supplied by three fermented or smoked things made at home — sa-um, which is pork fat cooked and then fermented in a hung bottle-gourd container; bekang, soybeans fermented under leaves and ash; and rep, meat or bamboo shoot dried hard in the smoke of the household hearth. The chemistry that a Gangetic cook gets from browning onions in fat, a Mizo cook gets from fermentation. Salt was historically scarce and carried up from the plains, which is a large part of why alkali and fermentation carry so much of the flavour load here.

मसाले की पहचान
Effectively three ingredients — chilli, ginger and garlic — over a base of leafy herbs picked the same morning. The chilli is the tiny Mizo bird's-eye, hot enough that it is used in single figures and served separately as a pounded chutney rather than cooked into the dish. There is no ground spice mix anywhere in the tradition. Placed against its neighbours, the difference is stark: Assam adds mustard oil and khar, the Imphal valley adds ngari and a much longer herb list, Bengal adds a five-spice tempering, and these hills add none of it. What they add instead is smoke and ferment.

Bamboo-tube steaming
Meat, greens and a little water are packed into a green bamboo internode, plugged with leaves and set at an angle over embers. The tube burns on the outside while its own moisture steams the contents; the food takes a faint sweetness from the culm and the vessel is thrown away afterwards. It is the only cooking vessel in the region that costs nothing and needs no washing.

Hearth-smoking (rep)
A rack sits permanently above the cooking fire. Pork, beef, fish and bamboo shoot go up wet and come down weeks later dry, dark and hard, to be rehydrated by boiling. This is refrigeration in a place with heavy rain and no dry season, and it is why smoke rather than spice is the region's flavour signature.

Sa-um fermentation
Abdominal pork fat is cooked, chopped and packed into a dried bottle gourd — the sa-um bur — which is hung over the fireplace for three days or longer until it turns pungent and semi-liquid. A spoonful seasons a whole pot of boiled vegetables. It is the single ingredient that makes bai taste Mizo rather than merely boiled.

Chingal alkali extraction
Ash from the hearth is heaped into a conical bamboo strainer, the chingal thlawrbur, and water poured through it; the alkaline filtrate is caught below and stored. Added to a pot it softens tough greens and bamboo fibre and raises the flavour, doing the work that fat does elsewhere. Baking soda has replaced it in most town kitchens.

Bekang leaf-and-ash fermentation
Boiled soybeans are spread on leaves, covered with warm hearth ash and more leaves, and left undisturbed for about three days near the fire. The result is sticky, ammoniacal and close kin to natto; it is eaten fresh, sun-dried for storage, and in some households ground into tea.

Pounded raw chutney (rawt)
Chilli, garlic, salt and whatever green is at hand are crushed together in a wooden mortar and served uncooked beside the meal. It carries all the heat, so the cooked dishes need carry none — a division of labour that lets the same pot of bai suit a child and an adult at the same table.
