खानपान पद्धति

Mewar shares the Rajasthani pantry — ghee, gram flour, dried beans, baati — but not the reasoning behind it. The desert kitchen west of the range is built to survive the absence of water; Mewar's is built around a kharif maize crop, year-round dairy and a monsoon that actually arrives. So maize does work that pearl millet does in Marwar, buttermilk is used in quantity rather than rationed, and green things appear — sangri and ker are bought here, not gathered. Three kitchens run in parallel and rarely mix: the Rajput shikar kitchen of smoked and pit-cooked meat; the Vaishnav temple kitchen at Nathdwara, which is vegetarian, onion-and-garlic free and works to a published daily timetable; and the Bhil kitchen of the hill slope, which is maize, mahua and forest gathering.

मसाले की पहचान

Milder and wetter than Marwar's. Whole coriander and cumin dominate, garlic is used freely in the meat kitchen where the Marwari vegetarian kitchen refuses it, and the chilli is local Mathania-type or Nimbahera stock used for colour and body rather than the flat heat of the desert. The temple kitchen at Nathdwara runs the opposite way — no onion, no garlic, and aroma carried by cardamom, saffron, camphor, dry ginger and rose.

Soola and dhungar smoking

Meat is marinated in curd, threaded on skewers and grilled over embers, then finished by dhungar — a live coal set in a bowl inside the closed pot with ghee poured over it, so the smoke is absorbed rather than released. Mewar uses it on meat far more than on gravies, which is the local variation.

Ember baking (baati)

Wheat dough balls baked directly in cow-dung-cake embers until the crust cracks. Mewar's are usually smaller and denser than Marwar's, and the dal beside them is a five-lentil panchmel weighted towards urad rather than moong.

Repeated-boil kadhi

Buttermilk and gram flour brought to the boil and taken off it again over hours — locally described as sau ukale, a hundred boils. The repetition is what stops the curd splitting and thickens it without extra flour, and it produces a kadhi that keeps overnight in a hot kitchen.

Gluten washing (chakki ki sabzi)

Wheat dough is kneaded and washed under water until only the gluten is left, then steamed, cut and simmered in a curd gravy. It is the same operation that produces seitan, arrived at independently as a way of getting a meat texture out of grain in a household that will not cook meat.

Temple bhog scheduling

At Nathdwara the day is divided into eight darshans, each with its own food offering, cooked in the haveli kitchen and served to a fixed clock. What is cooked changes with the season and the festival calendar, and the town's sweet shops and dairies still work to the same hours because their stock turns over when the temple's does.

Mahua handling

The corolla of the mahua flower is collected as it drops at dawn in March and April, dried, and then used three ways — boiled as food, ground into flour with maize, or fermented and distilled. Handling it is a whole seasonal calendar on the Bhil slope, and the tree is protected within family holdings because of it.
