खानपान पद्धति
A high-rainfall kitchen is a preserving kitchen. Nothing dries outdoors between June and September, so everything that will be needed in the wet months is put down in April and May — jackfruit into sheets and papads, bamboo shoot into brine, tender mango into salt, pepper onto the drying yard. Rice is the grain, coconut is in most things, and the souring is done by Garcinia rather than by tamarind alone, which is what ties this kitchen to the coast below it and separates it from the plateau on the other side. Inside it, Kodava cooking is a genuinely separate cuisine: pork rather than mutton, a spice paste dry-roasted rather than a coconut gravy, and kachampuli, a black syrup boiled down from Garcinia juice, used a teaspoon at a time.

मसाले की पहचान
Pepper-led rather than chilli-led, which is the mark of a slope that grew pepper before chilli existed in India. Black pepper, green cardamom and cinnamon are grown within sight of the kitchen; coconut carries almost every gravy; curry leaf, coriander seed and a moderate dry chilli make the base. Kodava cooking is the exception and the reason the region cannot be described in one line — pandi curry uses no coconut at all, builds on a dry-roasted pepper and coriander paste, and takes its edge from kachampuli.

Kachampuli reduction
The fruit of Garcinia gummi-gutta is pressed and its juice simmered down over days, without vinegar, sugar or any starter, until it thickens into an almost black syrup with a sharp, faintly fermented smell. Nothing else in Indian cooking is made this way — every other Garcinia region dries the rind instead. A few drops sour a whole pot, and it keeps effectively indefinitely because the concentration is its own preservative.
Bamboo shoot leaching
Young shoots are cut in the first weeks of the monsoon, sliced fine and soaked in water changed several times over two or three days before they are cooked or brined. The soaking is not for texture — it removes the cyanogenic compounds that make a fresh shoot inedible, and skipping it is not an option.

Tambuli
A leaf, root or spice — doddapatre, ondelaga, curry leaf, pepper, ginger — is pounded raw with a little coconut and beaten into buttermilk and eaten cold at the start of a meal. It is never heated, because the point is to deliver the plant intact; it is the daily delivery mechanism for a dozen medicinal greens in a climate where damp and fever are constant.

Whole-fruit jackfruit processing
One tree is worked through the year in four different ways — tender fruit cooked as a vegetable, ripe bulbs eaten fresh, pulp boiled and spread on mats to set into leathery sheets, and seeds dried and ground. The sheets and the papads are what carry the crop through the monsoon, when almost nothing else can be dried.

Smoke-loft curing
Every traditional house has a rack or loft directly above the hearth, where meat, fish, spice and firewood sit in the smoke. In a place with four months of unbroken damp it is the only reliable dryer, and the faint smoke on Kodava cured pork comes from there rather than from any deliberate smoking step.

Coffee pulping and drying
Arabica is generally pulped wet — the skin stripped, the beans fermented overnight to loosen the mucilage, washed and dried to parchment. Robusta is more often dried whole as cherry in the sun. The difference is visible in every estate yard in the region and is the reason two coffees from adjacent hills taste nothing alike.
