खानपान पद्धति
This is a grain-and-dairy kitchen with almost no vegetables in it, and the reason is water. Groundwater across much of Kutch is saline, rainfall is unreliable and there is no perennial river, so field vegetables were never a dependable part of the plate. What the land does produce is bajra, jowar, moong and moth on rain-fed plots, and what the animals produce is milk — buffalo, cow, goat and camel. So milk and buttermilk substitute for water in the cooking itself, jaggery and dates carry the sweetness, and the fresh element on a traditional plate is usually raw onion, garlic chutney and green chilli rather than a cooked vegetable. Sugar-and-salt balance is the region's signature: a Kutchi kadhi is openly sweet, and the sweetness is doing preservation and palatability work in a saline environment rather than being a matter of taste alone.

Warm rather than hot. Coriander, cumin, turmeric, cinnamon, clove and black pepper over a moderate red chilli base, with jaggery balancing almost everything. Against Kathiawar, the difference is chilli and garlic — Saurashtra's plate is sharper, greener and much more garlic-forward. Against Marwar across the Rann, the difference is the sweetening and the dairy: Marwar leans on asafoetida, dried chilli and dried pulses, Kutch on jaggery, dates and milk. The one genuinely fierce thing in a Kutchi meal is the raw garlic-and-red-chilli chutney served beside it.

Hand-patted bajra rotlo
Bajra has no gluten, so the dough will not stretch and cannot be rolled. It is patted between the palms into a thick disc, slapped from hand to hand to compact it, and cooked slowly on an iron tava then finished directly over the flame so it puffs. Thickness is deliberate — a thin bajra rotlo falls apart, and the thick one holds a well of ghee or butter.

Chaas as cooking liquid
Buttermilk, not water, carries besan in kadhi and grain in several everyday dishes. In a landscape where much of the groundwater is brackish and milk is the one abundant liquid, this is a substitution made for supply reasons that then became the taste of the region.

Milk reduction to mawa
Banni buffalo milk runs very high in fat, and reducing it over a slow fire concentrates it into a solid that keeps without refrigeration and can be carried. Almost every Kutchi sweet is built on mawa for that reason rather than on fresh milk or on chhena.

Camel milk, drunk rather than set
Camel milk does not curdle into dahi or churn into butter the way buffalo milk does — its protein structure resists the usual dairy transformations — so among the Maldhari it is drunk fresh, taken in tea, or now sold to a dairy for processing. It is the one milk in the region that has no traditional solid form.

Jaggery and date sweetening in savoury food
Gur or chopped dates go into kadhi, into dal and into chutney, not as dessert but as the counterweight to salt and chilli. Dates come from the Mundra and Mandvi groves, so the ingredient is local rather than traded in, which is why it appears so freely.

Dry-roasted composite masala
Whole spices — coriander, cumin, cinnamon, clove, pepper, chilli — are dry-roasted and ground into a single blend used across many dishes rather than built up in the pan for each. Dabeli masala is the best-known example and is now sold nationally as a packaged spice mix.
