खानपान पद्धति

The hottest and sourest kitchen in the Telugu country, and the one with the most rice to carry it. Heat and acid are handled as separate variables here: a meal can be violently sour and only moderately hot, or the reverse, and the household vocabulary distinguishes them. The structure of a plate is fixed — rice, a pappu, a pulusu, a fry, a pachadi, curd rice to close — and the pickle jar is a piece of infrastructure rather than a condiment, laid down once a year in quantities measured in kilos of mango. Against Telangana this food is wetter, sourer and rice-based rather than millet-based; against Uttarandhra immediately north it is hotter and drops the corrective spoon of jaggery; against Chola Nadu across the Tamil boundary it uses far more chilli and far less coconut and asafoetida.

मसाले की पहचान

Guntur chilli in bulk, ground medium-coarse and used as a body ingredient rather than a seasoning; fresh green chilli alongside it; mustard, fenugreek, cumin and curry leaf in the tempering; garlic heavily; and very little of the whole-spice aroma register that the north relies on. There is no cardamom and no cinnamon in a normal savoury dish here. The two named heats are distinct — karam is dry ground chilli, and pandu mirapakaya is the ripe red fresh chilli, pickled, which is hotter, fruitier and eaten in far smaller quantities.

Ooragaya — the annual oil-sealed jar

Mango is cut through the stone so each piece keeps the hard inner kernel, and the whole process is a war against water. The fruit is wiped dry, the salt draws out surface moisture, the mustard powder is ground fresh and dry, and everything is sealed under a layer of oil in a glazed ceramic jaadi that is opened only with a dry spoon. Done properly the jar lasts the year; a drop of water in it spoils several kilos of fruit at once, which is why the making is an event with rules rather than a recipe.

Pachi pulusu — the uncooked sour broth

Tamarind is soaked and pressed in cold water, and raw onion, green chilli, coriander and salt are added without any cooking at all; only the tempering is hot. It is a hot-weather dish and it is the clearest statement of the region's attitude to acid — the sourness is not softened by heat, and it is not meant to be.

Gongura pounding

Roselle leaf is cooked down until it collapses, then pounded in a stone rolu with garlic, salt and fried chilli rather than blended. Pounding tears the leaf and releases its acid without whipping air into it, which is why a machine-ground gongura pachadi tastes flat and goes off faster.

Rekulu — lifting a starch film off a heated pot

A thin rice-starch batter is wiped across the outside of an inverted earthen pot heated from below. The film sets in a few seconds and is peeled away whole as a translucent sheet thinner than paper. Layered with powdered sugar or jaggery and ghee and folded, it becomes pootharekulu. The skill is entirely in the wipe and the lift, it cannot be mechanised satisfactorily, and it is done almost exclusively by women working at home in one village group.

Sun-drying prawn and fish

The day's small catch is salted and dried hard on mats and racks. Dried prawn in particular is used as a seasoning rather than a protein — a pinch pounded into a chutney or a gongura — which extends a perishable catch across months and across dishes it does not visibly appear in.

Delta pond aquaculture

Not a cooking technique but the one that now decides what is on the plate and in the export container. Low-lying paddy and lake-fringe land between the two deltas has been converted at scale to freshwater and brackish ponds growing vannamei shrimp and carp. The conversion is why Bhimavaram matters nationally, why Kolleru shrank, and why prawn is cheap in a delta that used to eat mainly river fish.
