खानपान पद्धति

Two kitchens sit inside one larder. The Kashmiri Pandit kitchen cooks without onion or garlic and builds its aromatics on asafoetida, dry ginger and fennel; the Kashmiri Muslim kitchen uses praan — the local shallot — and garlic freely, and carries the wazwan, a professional banquet tradition with its own guild of cooks. Both share the same underlying grammar: yoghurt as the body of a gravy, fennel and dry ginger in place of the cumin-coriander base of the plains, colour supplied by flowers and roots rather than by chilli, and a rice-first plate. And both are organised around the same problem, which is that the valley grows nothing for five months of the year. Autumn is spent drying, pickling and stacking; winter cooking is the reconstitution of that store.

मसाले की पहचान

Fennel and dry ginger are the signature, in that order, and their dominance is what separates a Kashmiri gravy from a Punjabi or Awadhi one at the first spoon. Around them sit asafoetida, black and green cardamom, cinnamon, clove and a little black cumin. Turmeric is used for the pale dishes, never for the red ones. Chilli is chosen for colour: the local red is a low-pungency, deep-staining pod, and the deepest red in the repertoire is not chilli at all but mawal — dried cockscomb flowers — and ratanjot, the bark of an alkanet root steeped in hot oil. Saffron is used in tiny quantity and mainly in tea, sweet pulao and milk sweets, because the household that grows it sells it.

Kut — the pounding of rista and gushtaba

Meat from the hind leg is taken warm, sinew stripped by hand, and pounded on a flat stone with a heavy wooden mallet until it becomes an elastic paste. A grinder is refused for a mechanical reason, not a sentimental one: blades cut the fibre and heat the fat, while pounding stretches the protein into a network that holds a ball together in boiling gravy without any binder. Rista goes into a red gravy, gushtaba into a white yoghurt one, and both are the test by which a waza is judged.

Yakhni — yoghurt held without splitting

Whisked curd is added to meat stock and stirred continuously in one direction, uncovered, until it comes to a simmer; the pot is not lidded until the emulsion has set. Fennel and dry ginger go in with the curd, and the gravy stays white. Covering it early, or letting it boil hard, curdles it — which is why yakhni is the dish a Kashmiri household uses to judge a new cook.

Hokh syun — the autumn drying

Through September and October every flat roof and courtyard wall in a village carries bottle gourd cut in a continuous spiral, tomatoes threaded on string, split brinjal, turnip and greens. Dried in the valley's low-humidity autumn without salt or smoke, they are soaked and cooked through the winter, and they taste nothing like the fresh vegetable — concentrated, slightly fermented at the edge, and treated as a separate ingredient rather than a substitute.

Ver — the compounded spice cake

Red chilli, garlic, shallot, cumin, ajwain, cardamom and other spices are ground wet with a little mustard oil, pressed into a thick ring with a hole through it, and sun-dried hard. A piece is broken off and dissolved into fish, lotus stem or vegetable dishes. It is a household's whole seasoning shelf compressed into a storable object, made once a year and often given as a gift between families.

Colour without heat — mawal and ratanjot

The red of a properly made rogan josh comes from dried cockscomb flowers steeped in hot water and from ratanjot, an alkanet root whose pigment dissolves only in fat, so it is bloomed in oil and the root discarded. Chilli contributes some colour and very little heat. The result is a dish that photographs like a fiery curry and eats like a mild one — the same aesthetic logic as the Awadhi refusal to let a gravy announce its spice.

Kandur baking

Bread is not made at home. The kandur, the neighbourhood baker, works a clay wall-oven from before dawn and the household buys twice a day: girda and tsochvor in the morning, lavasa or kulcha in the evening, bakerkhani and sheermal for guests and for Eid. A Kashmiri kitchen therefore has no tawa culture and no home tandoor, and the bakery is the place village news actually circulates.
