खानपान पद्धति

The Dogra kitchen is built on sourness and on curd, and it is the one thing that most cleanly separates Duggar from both its neighbours. Punjab below cooks with tomato, onion and cream; the Kashmir Valley above cooks with fennel, dry ginger and asafoetida and almost no onion. Duggar does neither. It sours with dried pomegranate seed, tamarind and raw mango, thickens with whipped curd rather than cream, grinds mustard seed into cold sauces instead of only frying it, and balances every sour dish with jaggery rather than sugar. The reason is largely the kandi — a rain-fed gravel belt where the reliable crops were maize, wheat, gram and pulses, the reliable protein was milk, and the reliable flavourings were what grew wild on the ridge. Meat is common but not daily, and the traditional Dogra meat dishes use no onion and no garlic at all.

Dry-sour and warm rather than hot. Anardana and amchur do the work that tomato does in Punjab; Kashmiri chilli supplies colour and very little heat; ajwain, whole coriander, fennel and black cardamom carry the aroma. Raw ground mustard seed appears uncooked in auria, which gives a nose-heat entirely different from chilli heat. Asafoetida is used in the vegetarian dham cooking; onion and garlic are absent from the older ceremonial repertoire and only enter through the market kitchen.

Acid-setting and knead-drying (kalari)

Raw full-fat milk is set with soured milk rather than rennet, and the curd is worked by hand until it turns elastic and rubbery, then packed into dona leaf-bowls and left in the sun. The bowl is semi-porous, so whey drips out while the surface dries — the result is dry outside and moist inside, and a surface mould is considered part of the flavour. It is then never eaten raw: a slice is put dry into a hot pan, releases its own fat, fries in it and is salted at the moment of serving. It is one of very few Indian cheeses meant exclusively to be cooked.

Anardana souring

Seeds of the wild hill pomegranate are dried whole and then either coarsely ground or used entire. Unlike tamarind it carries no sweetness and unlike amchur it is not astringent, so it can be pushed hard without unbalancing a dish. It is the acid in khatta meat, in the Dogra chutney and in most of the region's dry vegetable preparations.

Raw mustard emulsion (auria)

Mustard seed is soaked, ground to a paste and beaten raw into whipped curd, which is then poured over boiled potato, arbi or radish and served cool. Nothing is cooked after the mustard goes in, so the isothiocyanate heat survives — the dish burns in the sinuses and not on the tongue. Heating it would destroy exactly the thing it exists for.

Curd-braising with whole spice (madra)

Whipped curd is stabilised with a little gram flour and brought up very slowly in ghee with cassia, clove and black cardamom, so it thickens without breaking, and soaked chickpeas or rajma finish in it. It is a technique built for a place with reliable milk and unreliable vegetables, and it is the load-bearing dish of the ceremonial meal on both sides of the Ravi.

Sweet-sour reduction (ambal)

Pumpkin is cooked down with tamarind and jaggery and tempered with fenugreek seed until the two ends meet and neither dominates — served as a course in its own right in the Dogra dham rather than as a chutney. The fenugreek bitterness is the third leg that keeps it from reading as dessert.
