The technique of preserving small freshwater fish by drying and then fermenting them in a sealed vessel, and of using the result as the savoury base of everyday cooking rather than as a garnish. Ngari here, shidal and its relatives in the Brahmaputra and Barak valleys, shutki across the Bengal delta, and the same principle continuing east into the Chindwin drainage.

अंतर कहाँ है: Ngari is fermented dry in an oiled pot and used in pinches, often roasted first; Assam's shidal is packed into a distinctively shaped earthen pot and is wetter; Bengal's shutki is more often simply sun-dried and then cooked as a dish in its own right rather than used as a base. The further west the belt runs, the more the fish is treated as an ingredient and the less as a seasoning.

Fermented bamboo shoot as the acid, Bacillus-fermented soybean as the savoury base, boiling and leaf-wrapped steaming as the methods, and almost no oil or ground spice — one kitchen grammar across the whole massif and its valleys.

अंतर कहाँ है: The soybean ferment is hawaijar here, axone among the Sumi, bekang among the Mizo, kinema in Sikkim and Darjeeling, tungrymbai in the Khasi hills. The valley substitutes fermented fish for fermented soybean as the dominant note and has no hearth-rack smoking tradition to speak of, where the ridges above it are built on smoke.

Tangkhul, Mao, Poumai, Maram, Zeliangrong and other Naga communities occupy the hills on the valley's northern and eastern rim, and their material culture moves down onto the floor and is sold there: Longpi pottery from Nungbi, Kachai lemons and Sirarakhong chillies from Ukhrul, oranges from Tamenglong, and the fermented bamboo shoot the valley cooks with. The continuum runs unbroken across the frontier into the Sagaing hills.

अंतर कहाँ है: The same objects carry different attributions on each side of the contour: Longpi ware is a Tangkhul craft made in the hills and marketed as a Manipur product in the valley and beyond. Getting the attribution right is the whole point of recording the corridor.

The Manipuri Vaishnav Corridorअंतरराष्ट्रीय

Gaudiya Vaishnavism arrived from Bengal and Assam in the seventeenth and eighteenth centuries and returned outward in Manipuri form — Sankirtana, Raas Leela, the pung, the Brajabuli song texts and the Manipuri and Bishnupriya Manipuri communities long settled in the Barak valley, Tripura and eastern Bangladesh, who maintain the same performance calendar.

अंतर कहाँ है: Outside the valley the repertoire is maintained as diaspora practice with a stronger emphasis on Sankirtana and a weaker one on Lai Haraoba, because the Umang Lai groves — which are attached to specific localities and specific lineages — could not be transplanted.

The Polo Corridor

Sagol Kangjei, the seven-a-side stick-and-ball game played on Manipuri ponies, taken up by planters and officers at Silchar in the 1850s, then Calcutta, and from there into the international sport.

अंतर कहाँ है: The modern game standardised on larger horses, four a side and codified rules; the local game kept the pony, the larger side and its ritual associations. The Manipuri pony itself is a distinct registered breed whose numbers have fallen sharply as grazing land has gone.
