खानपान पद्धति
This is where the Rajasthani vegetarian kitchen is at its most codified, because the people who exported it came from here. The Shekhawati merchant household cooked without onion or garlic, used asafoetida in their place, leaned on gram flour, dried pulses and ghee, and treated a preserved pantry as the normal state of a kitchen rather than an emergency measure. Jaipur added a court kitchen and, more consequentially, a confectioner's trade: the city's halwais turned festival sweets into year-round commerce, which is why a ghewar made for Teej is now sold by weight in December. Meat exists — laal maas and soola travel here from the west and south — but the region's own signature is the halwai's counter and the bania's kitchen.

मसाले की पहचान
Coriander seed in bulk, cumin, turmeric and a moderate dried red chilli — cooler than Marwar's Mathania-driven heat and far less aromatic than the north Indian court kitchens. Asafoetida does structural work here because the merchant kitchen refuses onion and garlic, and ajwain appears in almost every fried bread. The sweet side runs on cardamom, saffron and rose, and on khoya rather than on nut pastes.

Honeycomb frying (ghewar)
A thin, cold, watery flour batter is trickled from a height into a deep ring mould standing in very hot ghee. Each stream boils on contact and sets before the next arrives, so the disc builds as a lattice of holes rather than a solid cake. The batter's temperature matters more than the recipe, which is why ghewar is a summer-monsoon product — it fails in dry heat.

Dabu mud resist
A paste of clay from a tank bed, gum, lime and sieved wheat chaff is printed onto cloth with a block, dusted with sawdust so it does not smear, dried, and the cloth is then dyed. The paste blocks the dye and is washed off, leaving the pattern in the undyed ground. Multiple rounds give multiple colours.

Harda and syahi
Cloth is pre-treated with harda — myrobalan — which fixes the mordant and turns the ground a warm ivory rather than white. Black comes from syahi, scrap iron fermented with jaggery for weeks until it yields a ferrous liquor. Neither step is decorative; without them the natural dyes will not hold.

Ala gila fresco
Lime plaster ground with marble dust is laid on damp and painted while it is still wet, so the pigment is taken into the setting lime rather than sitting on it. The surface is then burnished with agate. Done properly it survives a century of street dust; done dry, as most of the later Shekhawati work was, it flakes.

Quartz-body pottery
Jaipur blue pottery contains no clay at all. The body is quartz powder, powdered glass, fuller's earth and gum, worked into a dough that cannot be thrown on a wheel and must be pressed into moulds. It is fired once, at a low temperature, with the cobalt and copper glaze applied before firing rather than after.
Rag paper making
Cotton rag and textile-mill waste are pulped, lifted on a mould from a vat, couched, pressed and dried against a wall in the sun. No wood pulp enters the process at any stage, which is why the sheets have long fibres and can be sized and printed on rather than merely written on.
