खानपान पद्धति
Two kitchens sit one above the other on the same hillside and trade ingredients daily. On the coast the meal is rice, a coconut fish curry and something fried; above the ghat, in the Havyaka areca villages, it is strictly vegetarian, often without onion or garlic, and built on the same coconut with jaggery and tamarind doing the work the fish does below. The signature of the upland kitchen is a sweet edge — jaggery goes into curries, not only into sweets — and a habit of eating leaves, tubers and forest produce that a garden economy surrounded by evergreen forest makes obvious. The one ingredient that crosses everything is the areca nut, which is not eaten as food but which pays for most of what is.

Restrained and aromatic rather than hot. Byadgi chilli supplies colour, coriander seed supplies the base, and the finish is asafoetida, curry leaf and mustard bloomed in coconut oil. Against Goa, which grinds chilli wet with vinegar and drives the dish with acid, this kitchen roasts its spices dry in a little oil and balances sour against jaggery. Against Tulu Nadu to the south, it uses less curry leaf and far more raw mango. The Havyaka register goes further still — several dishes are made without chilli at all, and pepper does the heat.

Appemidi brining
Tender wild mangoes are picked whole with a length of stalk intact — the stalk seals the fruit — and packed into salt brine in a glazed jar, weighted and left. Individual trees along the Aghanashini, Bedthi and Sharavathi are named, valued and inherited, because the aroma is tree-specific and does not survive grafting reliably. A jar opened three years later is considered better than a fresh one.

Leaf steaming
Rice batter or a spiced rice-and-coconut mixture is steamed inside jackfruit, turmeric or teak leaves, or inside a jackfruit-leaf cup pinned with a stick. The leaf is structural, not decorative — it is the vessel, and it flavours the contents while doing the job.

Thambuli
A leaf or herb — curry leaf, pepper vine, doddapatre, brahmi, coriander — is ground raw with coconut and stirred into buttermilk, and eaten cold with the first mouthfuls of rice. It is never cooked, which is the whole point; the preparation exists to get a medicinal green into a daily meal without heat destroying it.

Colocasia leaf rolling
Colocasia leaves are smeared with spiced rice paste, stacked, rolled tight and steamed, then sliced and either eaten as is or fried. The leaf is acrid raw and edible only once tamarind or buttermilk in the paste has neutralised it — the souring agent is a chemical step, not a flavouring.

Areca boiling and curing
Green areca is dehusked, boiled in a decoction of earlier boilings called kali, dried on courtyards for days and graded by size and cut into a dozen commercial classes. The colour, the grade and the price all come out of that boil, and the Sirsi trade's reputation rests on it. Chali, the sun-dried ripe nut, is processed differently again.

Estuarine bivalve gathering
Clams and oysters are collected by hand and by foot from the intertidal beds of the Aghanashini, mainly by women, and the shell is burnt for lime as well as the meat being eaten. It works only because the river's main stem carries no dam and the salinity gradient in the estuary stays intact.
