Braj cooks for a deity first and for people second, and the constraints follow from that. Food offered as bhog is cooked without onion or garlic, often by initiated cooks in dedicated vessels, and eaten afterwards as prasad — so the region's everyday kitchen is essentially a temple kitchen that came home. Milk is the base of everything, because the whole story is set among cowherds: not milk as an ingredient but milk reduced, scraped, layered, curdled and churned into a dozen distinct preparations that exist nowhere else in the same density.

मसाले की पहचान

Asafoetida standing in for onion and garlic, a heavy hand on ginger, black pepper and green chilli, and coriander seed as the base note. The Pushtimarg bhog kitchen adds cardamom, saffron and kewra for sweets and keeps the savoury side deliberately plain. Heat is present but shallow — the sharpness comes from hing and ginger rather than from chilli.

Bhog discipline

Food intended for offering is cooked to a ritual protocol — no onion, no garlic, no tasting during cooking, dedicated vessels, and a fixed sequence of offerings through the deity's day. The Pushtimarg havelis extend this to a seasonal menu that changes with the deity's clothing and the weather.

Khurchan scraping

Milk is simmered in a wide pan and the skin that forms is repeatedly scraped to the rim and left to build in layers, then lifted off as a sheet. It is neither rabri nor khoya but the layers between them, and Mathura is where it is made best.

Khoya reduction

Milk stirred down over a slow fire until it becomes a solid — the base of peda, barfi and most of the region's sweets. Mathura runs a wholesale khoya market that supplies half of western Uttar Pradesh.

Annakut assembly

For Govardhan Puja a mountain of cooked food — traditionally fifty-six items, the chhappan bhog — is built in front of the deity and then distributed. It is a technique of scale and sequence rather than of cooking, and the largest temples plan it for weeks.

Makhan churning

Cream is churned by hand in an earthen matka with a wooden bilona and the butter lifted off unwashed and unsalted, eaten with rock sugar. The child Krishna stealing it is the region's founding image, and the preparation is still made this way for offering.
