खानपान पद्धति

Deliberately light on oil and spice compared with the rest of India, built on boiling, steaming, fermenting and mashing. A full meal is framed by two opposites — it opens with khar, an alkali, and closes with tenga, a sour. Nothing else in India brackets a meal that way.

मसाले की पहचान

Restrained to the point of being a statement. Almost no dry spice powder and no garam masala tradition; heat comes from fresh green chilli and, near the hills, bhut jolokia. The defining axes are alkaline and sour rather than spiced — which is why the food reads as plain to a visitor and as precise to a local.

Ash-alkali extraction (khar)

Water is filtered through the ash of sun-dried banana peel to yield an alkaline extract, then cooked with papaya, pulses or fish. It exists nowhere else in India and it opens the meal.

Bamboo-hollow steaming (sunga pitha)

Sticky rice is packed into a length of green bamboo and set over an open fire, so the tube both cooks the rice and scents it. The vessel is consumed by the cooking.

Hearth smoking

Pork, fish and bamboo shoot are hung above the kitchen fire for weeks. In a valley that floods annually and a climate that never dries, smoke is the only reliable preservative.

Overnight rice fermentation (poita bhat)

Cooked rice is left in water overnight to ferment lightly and eaten cold the next morning with mustard oil and pitika. Summer food, and the traditional breakfast on Bohag Bihu morning.

Pitika mashing

Boiled vegetable or fish mashed by hand with raw mustard oil, chopped onion and green chilli — never cooked further. The rawness of the oil is the point.
