खानपान पद्धति
The delta kitchen is organised by sequence rather than by menu. A full meal is served in a fixed order on one plate or leaf, and the order is the recipe: shukto or another bitter first, then rice with ghee, then dal with a fried item beside it, then vegetables, then fish, then meat if there is any, then a sour chutney, then papor, then sweets and set curd. The logic is stated openly — bitter to open the appetite, sour to close it — and a cook who serves fish before dal is understood to have made a mistake, not a variation. Underneath the sequence sit three constants: rice, freshwater fish and raw mustard oil, none of which are optional and all of which come from water that is fresh and moving. Heat is low; the aromatic work is done by mustard, poppy seed, nigella and ginger rather than by chilli, and the sharpest thing on the table is usually a condiment.

मसाले की पहचान
Pungent rather than hot. The signature is mustard — as paste, as oil and as fermented kasundi — supported by poppy seed, nigella, fennel, fenugreek, radhuni and ginger. Chilli is present but restrained, and mostly whole and green. Against its neighbours the contrast is sharp: where Awadh infuses and Rarh dries and grinds poppy seed against the heat, the delta relies on volatile compounds that survive only if the oil is not overheated, which is why so much of the technique here is steaming, wrapping and finishing rather than frying down.

Bhape
The dish is sealed in a tiffin box or a banana-leaf parcel and steamed inside a covered pot, often set over the rice as it cooks. Nothing browns, nothing evaporates, and the raw mustard paste and raw mustard oil stay raw — which is the only way to get the specific volatile pungency of ilish bhape. Frying the same mixture produces a different dish entirely.

Paturi
Fish or vegetable coated in mustard and turmeric, wrapped in a banana or pumpkin leaf, tied and either steamed or laid on a griddle until the leaf chars. The leaf is a cooking vessel and a flavouring at once, and pumpkin leaf gives a grassiness banana leaf does not.

Kasundi fermentation
Mustard seed is washed, dried, ground and fermented in the sun with salt and spices over weeks in the hot pre-monsoon months. In older households it was made under strict purity rules, by women, in a cleaned room, and the batch was treated as ritually vulnerable until it was sealed. The result is far sharper than a milled table mustard, and it is used as a raw condiment rather than cooked.

Panch phoron tempering
Five whole seeds thrown into hot oil at the start — cumin, nigella, fenugreek, fennel and, in the delta, wild celery seed rather than the black mustard used elsewhere. Kept whole and unground so each seed releases at a different moment; grinding the mix produces something the kitchen does not recognise.

Chhena pak
Milk is split with whey or lime, the curd drained and then kneaded until the grain disappears. Everything the sweet trade does — rosogolla boiled in syrup, sandesh cooked briefly with sugar, chhanar payesh — depends on how long the curd is worked and how hot the sugar is taken. Confectioners distinguish naram pak from kora pak by a few degrees and a few minutes.

Bhaja and the frying order
Vegetables are sliced, salted, turmeric-rubbed and shallow-fried in mustard oil, and the oil is then reused down a fixed sequence — bitter first, potato and aubergine after, fish last — so that flavours accumulate in one direction and never travel backwards into the bitter course. It is a technique about scheduling as much as about heat.
