व्यंजन

Two kitchens, both Awadhi. The professional Muslim kitchen of the city, built around meat, dum and aroma; and the Hindu and Kayastha household kitchen of the countryside, built on wheat, rice, gram and the year's preserves — the same aromatics, without the meat, and with a much heavier hand on ghee.

Galouti kebabमांसाहारीStarter

A minced-mutton patty tenderised with raw papaya and a very large spice mix, fried on a shallow tawa so it holds just long enough to reach the plate. The origin story attaches it to an ageing Nawab who had lost his teeth; whether or not that is true, the texture is the whole design.

Kakori kebabमांसाहारीStarter

A seekh kebab of finely minced mutton bound with khoya and worked to a paste so smooth it is barely held on the skewer. Named for the qasbah of Kakori, west of Lucknow.

Lucknawi (pukki) biryaniशाकाहारी और मांसाहारीMain

Meat cooked separately to a pale yoghurt-and-potli gravy, layered with parboiled rice, sealed and finished on dum. Pale, aromatic, and deliberately unlike the Hyderabadi kachchi method in which raw marinated meat and rice cook together.

Nihari–kulchaमांसाहारीBreakfast

Shank and trotter stewed overnight to a gelatinous gravy and eaten at dawn with a soft kulcha. The Lucknow version is thinner and less fiery than Delhi's, and the pot is traditionally never fully emptied — a base is carried forward to the next day.

SheermalशाकाहारीBread

A mildly sweet, saffron-tinted flatbread enriched with milk and ghee and baked against a tandoor wall. Eaten with nihari and korma, and by itself with tea.

Warqi paratha and ulte tawe ka parathaशाकाहारीBread

Two laminating traditions — one folded into visible leaves, one cooked draped over an inverted tawa so it takes radiant rather than direct heat and stays pliable.

Awadhi kormaमांसाहारीMain

Meat braised in yoghurt with birista, cashew or melon-seed thickening and a potli infusion. Pale gold, no tomato, no visible chilli, and the aroma arrives before the plate does.

Kaliya and pasandaमांसाहारीMain

Kaliya is the turmeric-yellow braise; pasanda is a cut of leg beaten thin, marinated in yoghurt and cooked slowly. Both belong to the older dastarkhwan and are getting harder to find.

Dum ki arbi and dum aloo AwadhiशाकाहारीMain

The vegetarian half of the same technique — colocasia or potato hollowed, stuffed, and finished sealed with the identical potli aromatics used for meat.

Bhindi ka salan and lauki musallamशाकाहारीMain

Household vegetarian cooking from the Kayastha and Brahmin kitchens, using whole spice and mustard oil, and much lighter on aromatics than the professional kitchen.

Sattu and litti at the eastern edgeशाकाहारीEveryday

Roasted gram flour drunk in summer or stuffed into a baked wheat ball. A Magadh and Bhojpur staple that crosses into eastern Awadh and thins out around Sultanpur.

Malai makhan (nimish)शाकाहारीDessert

A winter-only foam of milk skimmed at dawn after a night under dew, dusted with saffron and pistachio. It collapses within hours, which is why it has never travelled.

Shahi tukda and muzaffarशाकाहारीDessert

Fried bread in reduced milk, and a saffron vermicelli set with dry fruit — the two sweets that close a formal dastarkhwan.

Malai giloriशाकाहारीDessert

A folded milk-solid parcel shaped like a paan, filled with cream and scented with kewra. Ram Asrey in Chowk has been making them since the early nineteenth century.
